Cucumber sandwiches

Here is a fun finger sandwich that is full of veggie goodness but fun to eat. We often make cucumber sandwiches as small finger sandwich sized treats. All you need is your favorite bread, some mayo and slices of cucumber that has the skin removed. As a kid, I used to eat cucumber sandwiches all the time with my grandmother. We’d add some onions to the mix and they were oh so good!

My kids love cucumber sandwiches. You don’t have to remove the bread crust, and a whole sandwich with multiple pieces of cucumber is yummy too. For a little extra flavor,instead of mayo try ranch dressing, veggie cream cheese or Greek cucumber yogurt sauce.
